A delightful blend of fresh baby spinach, sweet strawberries, creamy feta, and crunchy toasted pecans, perfect for a quick and healthy meal.

Ingredients

  • 10 oz baby spinach
  • 3 cups strawberries, cleaned, hulled, and sliced
  • 1 cup pecans, toasted (some chopped)
  • â…“ cup crumbled feta cheese
  • 1 cup balsamic vinegar
  • ¼ cup honey or brown sugar

Instructions

  1. In a small saucepan, combine the balsamic vinegar and honey (or brown sugar) over medium heat. Warm the mixture until it becomes syrupy.
  2. Bring to a gentle boil and let it simmer for about 10 minutes until it reduces to a thicker consistency. Remove from heat and allow to cool.
  3. In a large bowl, toss together the baby spinach, sliced strawberries, and crumbled feta.
  4. Divide the salad into bowls and top with toasted pecans.
  5. Drizzle with balsamic glaze just before serving.
