  • 1 cup (168 g) milk chocolate chips
  • 1¼ cups (156 g) all-purpose flour
  • ½ cup (59 g) Dutch-processed cocoa powder
  • ¼ tsp baking soda
  • 1 tsp kosher salt
  • 3 large eggs, room temperature
  • 1¼ cups (250 g) granulated sugar
  • ½ cup (109 g) vegetable oil
  • ¾ cup water
  • ½ cup (84 g) milk chocolate chips (for ganache)
  • ¼ cup (59.5 g) heavy cream (for ganache)

Instructions

  1. Preheat your oven to 325 °F (165 °C) and prepare a 9×5-inch loaf pan with nonstick spray.
  2. In a microwave-safe bowl, melt 1 cup of milk chocolate chips in 30-second intervals until smooth. Let cool slightly.
  3. In a bowl, whisk together 1¼ cups of flour, ½ cup of cocoa powder, ¼ tsp of baking soda, and 1 tsp of salt.
  4. In a stand mixer, beat 3 eggs and 1¼ cups of sugar until pale and fluffy (about 5 minutes).
  5. Add the melted chocolate, ½ cup of oil, and ¾ cup water to the egg mixture; mix until combined.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Pour the batter into the loaf pan and bake for 85-90 minutes, checking at 75 minutes.
  8. Let cool completely on a wire rack. For the ganache, simmer ¼ cup of heavy cream and pour it over ½ cup of chocolate chips; stir until smooth.
  9. Drizzle ganache over the cooled loaf and let set for 10-15 minutes before slicing.
