Busy Day Soup is a warm and comforting dish that combines vibrant vegetables, tender pasta, and savory ground beef, perfect for hectic days.

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (93%-7%)
  • 1 packet onion mushroom soup mix (about 1.8 ounces)
  • 2 cups room-temperature water
  • 4 cups (1 quart) low-sodium vegetable broth
  • 1 can (15.25 ounces) whole kernel corn, drained
  • 1 can (14.5 ounces) cut green beans, drained
  • 1 can (14.5 ounces) peas and carrots, drained
  • 1 can (14.5 ounces) petite diced tomatoes, in juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ pound (8 ounces) dry elbow pasta noodles

Instructions

  1. In a large stockpot over medium-high heat, warm the olive oil until it shimmers. Add the ground beef and cook for 5 to 6 minutes until browned, breaking it into small pieces.
  2. Stir the onion mushroom soup mix into the room-temperature water until dissolved, and pour into the pot with the beef.
  3. Add the vegetable broth, drained corn, green beans, peas and carrots, diced tomatoes with their juices, salt, and black pepper. Lower the heat and simmer for 20 minutes, stirring occasionally.
  4. Add the dry elbow pasta and let it cook for an additional 10 to 13 minutes, stirring often.
  5. Once the pasta is cooked, turn off the heat. Serve the soup warm in bowls.

Notes

This soup is versatile; feel free to use any vegetables you have on hand. It can also be made with ground turkey or chicken for a lighter version.
