2 slices of sourdough or ciabatta bread
1 cup cooked chicken breast, shredded
½ cup marinara sauce
1 cup mozzarella cheese, shredded
¼ cup grated Parmesan cheese
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Shred the cooked chicken into bite-sized pieces.
In a bowl, mix the shredded chicken with marinara sauce, Italian seasoning, salt, and pepper.
Layer half of the mozzarella cheese on one slice of bread, followed by the chicken mixture and Parmesan cheese, then top with the remaining mozzarella and the second slice of bread.
Heat olive oil in a skillet over medium heat and add the sandwich.
Grill for 3-4 minutes on each side until the bread is golden brown and cheese is gooey.
Slice in half and serve with extra marinara sauce for dipping.
