A light and fluffy dessert combining sweet crushed pineapple, Cool Whip, and marshmallows, perfect for warm days and nostalgia.

Ingredients

  • 1 can (20 oz) crushed pineapple with juice
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 tub (8 oz) Cool Whip, thawed
  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. In a large mixing bowl, combine the crushed pineapple with its juice and the instant vanilla pudding mix. Stir until well blended.
  2. Gently fold in the thawed Cool Whip until smooth and fluffy.
  3. Stir in the mini marshmallows.
  4. If desired, fold in the chopped pecans or walnuts and the shredded coconut.
  5. Refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

For a lighter version, use low-sugar pudding mix or Greek yogurt instead of some Cool Whip.
