Jack-O’-Lantern Sandwich Cookies

Delicious autumn-inspired sandwich cookies filled with cream cheese frosting, designed to look like cute jack-o’-lanterns.

Ingredients

  • 2 3/4 cups all-purpose flour, plus more for surface
  • 1 1/2 tsp pumpkin spice
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 cup pumpkin puree
  • 1 tsp pure vanilla extract
  • 6 oz cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp pure vanilla extract
  • A pinch of kosher salt

Instructions

  1. Whisk together flour, pumpkin spice, baking powder, and salt in a large bowl.
  2. In another bowl, beat softened butter and sugars until creamy. Add egg, pumpkin puree, and vanilla, mixing well.
  3. Slowly add in dry ingredients and beat until just combined. Divide dough, wrap in plastic, and refrigerate for at least 2 hours.
  4. Preheat oven to 350°F. Roll out chilled dough and cut out pumpkin-shaped cookies.
  5. Cut whimsical faces into half of the cookies. Bake for 8 to 10 minutes. Let cool.
  6. Beat cream cheese and powdered sugar until smooth, then add vanilla and salt.
  7. Spread frosting on the cookies without faces and sandwich them with the ones with faces.
  8. Decorate faces with more frosting if desired.

Notes

Great for Halloween parties or festive gatherings! Can freeze dough for up to three months.
