Tender, juicy chicken skewers marinated in zesty ranch dressing and garlic, finished with melted Parmesan cheese.

Ingredients

  • 1.5 pounds chicken breast, cut into 1-inch cubes
  • 1 cup ranch dressing
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • Skewers (wooden or metal, if using wooden, soak them in water for 30 minutes)

Instructions

  1. In a large bowl, combine the ranch dressing, minced garlic, olive oil, lemon juice, salt, and pepper. Mix well until fully blended.
  2. Add the cubed chicken breast to the marinade, ensuring all pieces are well-coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat your grill to medium-high heat (about 400°F or 200°C).
  4. Remove the chicken from the marinade, allowing excess marinade to drip off. Thread the chicken onto skewers, leaving space between each piece.
  5. Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. In the last minute of grilling, sprinkle the grated Parmesan cheese over the skewers, allowing it to melt slightly.

Notes

Serve alongside a crisp green salad or dip in your favorite sauces. Avoid overbaking to prevent dry meat.
