  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup creamy or chunky peanut butter
  • 1 cup fruit preserves or jelly (strawberry, grape, or raspberry)
  • 1/4 cup unsalted butter, melted
  • Optional toppings: whipped cream or vanilla ice cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together until well blended.
  3. In a separate bowl, mix the milk and peanut butter until smooth and creamy. Gradually pour this mixture into the dry ingredients, stirring gently until just combined.
  4. Pour half of the batter into a greased 9×13-inch baking dish. Drop spoonfuls of jelly evenly over the batter and pour the remaining batter on top.
  5. Drizzle the melted butter evenly over the top of the batter.
  6. Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the cobbler to cool for a few minutes before serving with whipped cream or vanilla ice cream.
