A quick, comforting meal that combines tender orzo pasta, juicy Italian sausage, and vibrant broccoli in a rich broth.

  • 2 cups broccoli florets
  • 1 pound Italian sausage
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, grated (optional)

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  2. Add the remaining olive oil to the skillet along with the minced garlic and broccoli florets. Sauté for another 3-4 minutes until the broccoli is bright green and tender.
  3. Stir in the orzo and Italian seasoning, ensuring everything is well combined.
  4. Slowly add the chicken broth to the skillet. Bring to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the liquid.
  5. Season with salt and pepper to taste. If desired, sprinkle with grated Parmesan cheese before serving.

Notes

Feel free to substitute orzo with quinoa or rice for a gluten-free option. You can use chicken or veggie sausage for lighter alternatives.
