Slow Cooker French Onion Meatloaf

A comforting meatloaf infused with the rich, savory flavors of French onion soup and caramelized sweet onions.

Ingredients

  • 34 large sweet onions, sliced
  • 4 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon granulated sugar
  • 1 pound ground beef
  • 1 cup Italian-herb bread crumbs
  • 1 cup milk
  • 1 egg
  • 1 oz. French onion soup mix
  • ½ cup cooking sherry
  • ½ teaspoon Worcestershire sauce
  • 4 oz Swiss, Gruyère, or provolone cheese
  • Fresh thyme sprigs (for garnish)

Instructions

  1. Layer sliced onions at the bottom of a 6-quart slow cooker.
  2. Sprinkle onions with sea salt, black pepper, and granulated sugar, then dot with salted butter.
  3. In a bowl, mix ground beef with bread crumbs, milk, egg, and onion soup mix; shape into a loaf.
  4. Pour cooking sherry and Worcestershire sauce over onions, then place the meatloaf on top.
  5. Cook on HIGH for about 3 hours or on LOW until the internal temperature reaches 160°F.
  6. During the last 20-30 minutes, sprinkle cheese on top of the meatloaf and cover to melt.
  7. Garnish with fresh thyme and serve with the onions and pan juices.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To freeze, wrap tightly and seal in a freezer bag.
