A colorful Taco Salad that combines savory ground beef, fresh veggies, and rich toppings, perfect for any occasion.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 head romaine or iceberg lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans (optional)
  • 1/2 cup corn (optional)
  • 1/4 cup sliced black olives
  • 1 cup crushed tortilla chips or broken taco shells
  • 1/2 cup sour cream
  • 1/2 cup salsa or taco sauce
  • 1 diced avocado or 1/2 cup guacamole
  • 1/4 cup chopped green or red onions

Instructions

  1. Brown the ground beef in a skillet over medium heat until caramelized. Drain excess fat.
  2. Add taco seasoning and a splash of water to the beef, stirring well and let it simmer for a few minutes.
  3. Chop the lettuce and slice the cherry tomatoes while the beef is cooking.
  4. In a large bowl, layer the lettuce, followed by the beef, then cheese, tomatoes, beans, corn, olives, and avocado or guacamole.
  5. Top with crushed tortilla chips, sour cream, and salsa. Mix gently or allow each person to mix their plate.

Notes

For a lighter version, substitute sour cream with Greek yogurt and use low-fat cheese.
