A festive and delightful sponge cake roll filled with cream cheese, perfect for holiday celebrations.

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • Red and green sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, beat the eggs and granulated sugar until thick and pale. Add the vanilla extract. In another bowl, whisk together the flour, baking powder, and salt, then fold into the egg mixture.
  3. Spread the batter evenly in the prepared pan and bake for 12-15 minutes until it springs back when touched.
  4. Invert the cake onto a powdered sugar-dusted kitchen towel, peel off the parchment paper, and roll it up with the towel while warm. Let it cool completely.
  5. Whip the softened cream cheese until smooth, add the powdered sugar and heavy cream, and mix until airy.
  6. Unroll the cooled cake, spread the cream cheese filling, and re-roll without the towel.
  7. Dust the top with powdered sugar and add festive sprinkles. Slice and serve.

Notes

For a healthier alternative, use low-sugar sweeteners or dairy-free cream cheese. Serve with ice cream or whipped cream.
