A creamy, savory soup that captures the flavors of a cheeseburger, perfect for cozy meals.

  • 1 pound ground beef
  • 4 tablespoons unsalted butter (divided into 1 tablespoon + 3 tablespoons)
  • 1 medium white onion, diced
  • 1 tablespoon Italian seasoning
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 large russet potatoes (about 3 cups), peeled and cut into bite-sized cubes
  • 3 cups low-sodium chicken broth
  • ¼ cup all-purpose flour
  • 4 cups shredded sharp cheddar cheese
  • 1½ cups milk (2%)
  • ¼ cup sour cream (full-fat)

Instructions

  1. In a frying pan, cook the ground beef until browned and drain excess grease.
  2. Melt 1 tablespoon of butter in a large pot, sauté onion and vegetables with seasoning until soft.
  3. Add cooked beef, cubed potatoes, and chicken broth; simmer until potatoes are tender.
  4. Melt the remaining butter in a small pan, stir in flour to create a roux.
  5. Add the roux to the soup and stir to combine.
  6. Stir in shredded cheddar cheese until melted and smooth.
  7. Stir in milk and sour cream; simmer until well blended.
  8. Serve hot, garnished with extra cheese if desired.

Notes

Great with crusty bread or a fresh garden salad. Can be frozen for later enjoyment.
