  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder

  • 1/4 tsp salt
  • 8 oz full-fat cream cheese
  • 1/2 cup granulated sugar (for cheesecake layer)
  • 1 large egg (for cheesecake layer)
  • 1 tsp vanilla extract (for cheesecake layer)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Melt the semi-sweet chocolate chips and unsalted butter together until smooth and let cool slightly.
  3. In a separate bowl, whisk together the granulated sugar, eggs, and vanilla extract. Add the melted chocolate mixture and stir until blended.
  4. Sift the cocoa powder, cornstarch, and salt into the brownie batter and stir until just combined.
  5. Pour the brownie batter into the prepared pan, spreading it evenly.
  6. In another bowl, beat the cream cheese and granulated sugar until smooth. Add the egg and vanilla extract, mixing until combined.
  7. Spoon the cheesecake mixture over the brownie batter and swirl with a knife.
  8. Bake for 30-35 minutes until a toothpick comes out with a few moist crumbs.
  9. Cool in the pan on a wire rack and refrigerate for at least 2 hours before cutting into squares.
