1/2 cup granulated sugar
1/4 cup powdered sugar, plus extra for dusting
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour, plus more for dusting
1/4 teaspoon salt

Instructions
Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
Stir in the vanilla extract until just combined.
In a separate bowl, whisk together the all-purpose flour and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
Turn the dough out onto a lightly floured surface and knead gently.
Wrap the dough disc in plastic wrap and refrigerate for at least 1 hour.
Preheat your oven to 325°F (160°C) and line baking sheets with parchment paper.
Roll out the dough to 1/4 inch thickness, cut into shapes, and place on prepared baking sheets.
Bake for 12-15 minutes until edges are lightly golden brown.
Cool on baking sheets for a few minutes, then transfer to a wire rack to cool completely.
