These vibrant, layered Christmas Stack Cookies are a delightful treat that combines a soft sugar cookie base with creamy frosting, perfect for festive gatherings.

Ingredients

  • 1 tube of sugar cookie dough
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • Green food coloring
  • 1/2 teaspoon salt
  • Christmas nonpareils and yellow mini M&Ms or sprinkle stars

Instructions

  1. Preheat your oven to 350°F and line a medium cookie sheet with parchment paper.
  2. Measure out cookie dough into balls of 1, 2, and 3 teaspoons large. Arrange them on your baking sheet, leaving space for spreading.
  3. Bake for 5 minutes. Remove the smallest cookies and continue baking the larger ones for an additional 3-4 minutes until golden.
  4. Let the cookies cool on a wire rack.
  5. In a bowl, beat butter until fluffy, then gradually add powdered sugar and blend until smooth.
  6. Pour in vanilla extract, heavy cream, food coloring, and salt. Beat until fully combined.
  7. Transfer the frosting to a piping bag fitted with a medium star tip.
  8. Pipe a circle of frosting onto your largest cookie. Top with the medium cookie, add another dollop of frosting, and crown it with the smallest cookie.
  9. Decorate with sprinkles and finish with a sprinkle star or mini yellow M&M.
  10. Serve and enjoy!
