Delicious crispy chimichangas filled with savory beef and gooey cheese, perfect for a comforting family meal.

  • ยฝ small onion, chopped
  • 1 clove garlic, minced
  • ยฝ teaspoon taco seasoning mix (or to taste)
  • 1 teaspoon dried oregano
  • ยผ cup sour cream
  • 1 (4-ounce) can chopped green chilies
  • 2 tablespoons distilled white vinegar
  • 1 cup shredded cheddar cheese
  • ยผ cup margarine (for dipping tortillas)
  • 6 (7-inch) corn tortillas

Instructions

  1. Preheat your oven to 450ยฐF (230ยฐC).
  2. In a skillet over medium heat, brown the ground beef with onion, garlic, taco seasoning, and oregano for about 8 minutes. Drain excess fat.
  3. Stir in sour cream, chopped green chilies, and vinegar until mixed. Fold in the shredded cheddar cheese.
  4. Melt margarine in a small skillet over low heat and dip each tortilla for about 30 seconds until softened.
  5. Place each tortilla on a baking sheet and fill with about 1/3 cup of the beef and cheese mixture. Fold in the sides and top/bottom to seal.
  6. Bake for 15 minutes until golden and crispy. Serve warm.

Notes

For a healthier option, substitute Greek yogurt for sour cream and ground turkey for beef.
