A quick and delicious one-pan dish that captures the flavors of a traditional egg roll, but with ease and minimal cleanup.

  • 1 large onion, finely diced
  • 1 tablespoon minced garlic
  • 2 tablespoons sesame oil
  • ยฝ cup finely shredded carrots
  • 16 ounces coleslaw mix
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon red pepper flakes
  • 1ยฝ teaspoons ground ginger
  • ยฝ to ยพ cup low-sodium soy sauce
  • 2 tablespoons vegetable oil
  • Green onions (optional, for garnish)

Instructions

  1. In a large, deep-sided skillet, cook the ground beef over medium heat until it loses its pink color.
  2. Drain excess grease, then return the skillet to heat. Add the finely diced onion and minced garlic, stirring until the onions are soft and translucent.
  3. Pour in the sesame oil, shredded carrots, and coleslaw mix. Use tongs to combine, sautรฉing for about 5 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together onion powder, garlic powder, red pepper flakes, ground ginger, soy sauce, and vegetable oil.
  5. Pour the sauce mixture over the beef and veggies, reduce the heat, and let it simmer for another 5 minutes, stirring occasionally.

Notes

This dish is perfect for meal prep! It can be stored in the refrigerator for up to 3 days. Freezing portions in airtight containers is also an option.
