Garlic Herb Chicken with Mashed Potatoes and Glazed Carrots

A hearty dish featuring tender garlic herb chicken paired with creamy mashed potatoes and sweet glazed carrots.

Ingredients

  • 4 chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp chopped fresh parsley (plus more for garnish)
  • Salt and pepper to taste
  • 2 lbs potatoes (Yukon Gold or Russet), peeled and chopped
  • 1/2 cup milk or cream
  • 3 tbsp butter
  • 4 large carrots, peeled and sliced
  • 2 tbsp brown sugar or honey
  • 2 tbsp water

Instructions

  1. Season the chicken with minced garlic, dried thyme, dried rosemary, fresh parsley, salt, and pepper.
  2. In a skillet over medium heat, heat olive oil or butter and sear the chicken until golden brown and reach an internal temperature of 165°F.
  3. Bring a pot of salted water to a boil, add the chopped potatoes, and cook until fork-tender; drain and mash with butter, milk or cream, and seasoning.
  4. In a separate pan, combine sliced carrots with butter, brown sugar or honey, and water, then simmer until tender and glazed.
  5. Plate the chicken on a bed of mashed potatoes topped with glazed carrots and garnish with parsley.
