  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 3 large eggs
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 8 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips
  • Extra caramel sauce
  • Chopped pecans for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a jelly roll pan.
  2. In a large bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, sugar, oil, and vanilla until smooth. Gradually mix in dry ingredients.
  4. Stir in boiling water until the batter is silky.
  5. Pour batter into the pan and bake for 25-30 minutes.
  6. Let cool for 10 minutes, then roll the cake in a kitchen towel and allow it to cool completely.
  7. Beat cream cheese, powdered sugar, caramel sauce, and pecans until creamy for the filling.
  8. Unroll the cooled cake, spread the filling, and roll it back up without the towel. Chill for 30 minutes.
  9. Melt chocolate chips and drizzle over the roll with extra caramel sauce and pecans before serving.

Notes

Serve with vanilla ice cream for a delicious contrast. This cake roll can be made ahead of time and chilled.
