Grilled Coca-Cola Chicken

A finger-licking, sticky, and glossy grilled chicken dish glazed with a sweet and tangy Coca-Cola sauce, perfect for summer barbecues.

Ingredients

  • 2 tsp. kosher salt
  • 2 tsp. paprika
  • 1 tsp. cayenne pepper
  • Freshly ground black pepper, to taste
  • 2 lb. boneless, skinless chicken thighs
  • 6 cups Coca-Cola
  • 1/3 cup reduced-sodium soy sauce
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. ketchup
  • 1 Tbsp. light brown sugar
  • Zest and juice from 1 lime
  • 1/2 tsp. kosher salt
  • Neutral oil, for grill

Instructions

  1. In a large bowl, mix the kosher salt, paprika, cayenne pepper, and freshly ground black pepper.
  2. Coat the chicken thighs with the dry rub and let them marinate in the refrigerator for at least 30 minutes.
  3. In a medium pot, bring 6 cups of Coca-Cola to a boil, then reduce heat and let it simmer until thickened.
  4. Whisk in soy sauce, Worcestershire sauce, ketchup, light brown sugar, lime zest, lime juice, and 1/2 tsp. kosher salt.
  5. Prep the grill to medium-high heat and brush it with oil.
  6. Grill the chicken thighs for about 6-8 minutes on each side, basting with the glaze until cooked through.
  7. Let the chicken rest for 5 minutes before serving with fresh lime wedges.

Notes

For a lighter option, use skinless chicken breasts and consider a diet version of Coca-Cola to cut down on sugar.
