A comforting dish featuring tender chicken breasts atop creamy French onion soup and buttery rice, topped with melted cheese.

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup long grain white rice (uncooked)
  • 1 can (10.5 oz) French onion soup
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella or Swiss cheese
  • 1 tbsp olive oil or butter (for browning)
  • Salt and pepper, to taste
  • Optional: 1/2 cup sautéed onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season your chicken with salt and pepper, then brown it in a hot skillet with olive oil or butter until golden but not fully cooked through.
  3. In a mixing bowl, combine the French onion soup, chicken broth, and sour cream with uncooked rice. Stir to mix.
  4. Pour the mixture into a baking dish, placing the browned chicken on top. Sprinkle the cheese over the chicken.
  5. Cover with foil and bake for 50-60 minutes, removing the foil in the last 10-15 minutes to allow the cheese to brown.
  6. Let it rest before serving to allow flavors to meld.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze portions for later. Add chicken broth when reheating for moisture.
