A quick and easy Raspberry Freezer Jam recipe to preserve the vibrant summer fruit, perfect for spreading on toast or mixing into desserts.

Ingredients

  • 1 cup fresh raspberries, mashed
  • 1½ cups granulated sugar
  • Juice from 1 lemon (about 1 tablespoon)
  • 1 tablespoon vanilla extract
  • 1 (1.75-ounce) box of Sure-Jell Fruit Pectin
  • ¾ cup water
  • 3 half-pint jars

Instructions

  1. Mash the fresh raspberries until you have exactly 1 cup. Strain if you prefer a smoother jam.
  2. Stir in the granulated sugar until completely absorbed, then add lemon juice and vanilla extract. Let rest for 10 minutes.
  3. Combine the Sure-Jell and water in a saucepan. Whisk over medium-high heat until boiling.
  4. Pour the boiling pectin mixture into the raspberry-sugar mixture, stirring continuously for 1 minute until fully combined.
  5. Pour the jam into clean jars, leaving about ½ inch of headspace, seal tightly, and let sit at room temperature for 24 hours to set.

Notes

Use clean, sterilized jars to ensure freshness. You can use frozen raspberries if fresh is not available.
