  • 4 medium-sized zucchini, halved lengthwise
  • 1 pound ground meat (beef, turkey, chicken, or lentils for a vegetarian option)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup cooked rice or quinoa
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center, leaving about 1/4 inch of flesh.
  3. In a skillet, sauté the diced onion and minced garlic until translucent. Add the ground meat and cook until browned. Stir in the rice, tomato sauce, Italian seasoning, salt, and pepper, and let simmer for 5 minutes.
  4. Spoon the filling into each zucchini half and top with shredded cheese.
  5. Place the stuffed zucchinis in a baking dish, cover with foil, and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  6. Garnish with fresh basil or parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze individual portions.
