  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup shredded cheese (mozzarella or cheddar)
  • ½ teaspoon black pepper

Instructions

  1. Activate the Yeast: In a small bowl, mix the warm water, sugar, and yeast. Set it aside for 5-10 minutes until it becomes frothy.
  2. Prepare the Dough: In a large bowl, combine the flour and salt. Pour in the activated yeast mixture along with the olive oil, mixing until a dough comes together.
  3. Knead the Dough: Lightly flour your surface and knead the dough for about 8-10 minutes until smooth and elastic.
  4. First Rise: Transfer the dough to a lightly oiled bowl, cover it with a dish towel, and let it rise for 30 minutes.
  5. Prepare the Filling: Combine the minced garlic, fresh herbs, black pepper, and shredded cheese in a bowl.
  6. Roll and Fill: Roll the dough into a large rectangle, spread the filling evenly, and tightly roll into a log shape.
  7. Second Rise: Place the log seam-side down on your baking sheet and let it rise for 15-20 minutes while preheating your oven to 375°F.
  8. Bake: Brush with olive oil and bake for 25-30 minutes until golden brown.
  9. Cool and Serve: Let cool for 10 minutes before slicing and serving.

Notes

Use enough flour on your surface to prevent sticky dough. Can use whole wheat flour for added fiber. To reheat, wrap in foil and warm at 350°F for about 10 minutes.
