Delicious cookies packed with layers of peanut buttery goodness, featuring crunchy mini Reese’s Pieces and gooey mini Reeseโ€™s Peanut Butter Cups.

Ingredients

  • 113 grams unsalted butter, softened
  • 100 grams light brown sugar
  • 50 grams granulated sugar
  • 1 large egg
  • 190 grams creamy peanut butter
  • 1 teaspoon vanilla extract
  • 155 grams all-purpose flour
  • 1 teaspoon baking soda
  • 227 grams mini Reese’s Peanut Butter Cups
  • 150 grams mini Reese’s Pieces

Instructions

  1. Preheat the oven to 190ยฐC (375ยฐF) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the softened butter, light brown sugar, and granulated sugar. Beat until light and creamy.
  3. Add the egg, creamy peanut butter, and vanilla extract. Mix until thoroughly blended.
  4. Scrape down the bowl and add the all-purpose flour and baking soda. Mix on low speed until just combined.
  5. Fold in the mini Reese’s Peanut Butter Cups and mini Reese’s Pieces.
  6. Portion the dough into equal balls and place them on the baking sheet, leaving space for expansion.
  7. Press a few extra mini Reese’s Pieces onto the top of each dough ball.
  8. Bake for about 10 minutes, or until the edges turn golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week, or freeze individual portions for longer storage.
