A delightful no-bake dessert combining the sweet taste of pineapple with creamy coconut for a tropical bliss.

Ingredients

  • 240 ml crushed pineapple, thoroughly drained
  • 120 ml sweetened condensed milk
  • 1.5 cups (120 g) sweetened shredded coconut, plus extra for coating
  • 30 g powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of fine salt

Instructions

  1. In a medium mixing bowl, mix the drained crushed pineapple, sweetened condensed milk, 1.5 cups shredded coconut, powdered sugar, vanilla extract, and salt until well combined.
  2. Cover the mixture with plastic wrap and refrigerate for 30 minutes.
  3. Once chilled, take about one tablespoon of the mixture and roll it into compact spheres.
  4. Roll each ball in extra shredded coconut until fully coated.
  5. Place the coated balls on a parchment-lined tray and refrigerate for an additional 30 minutes to firm up.

Notes

Feel free to use low-sugar condensed milk for a lighter version or substitute coconut milk for dairy-free options.
