Delicious plant-based veggie burgers packed with flavors and perfect for any gathering.

Ingredients

  • 2 (15-oz.) cans black beans, drained and rinsed
  • 3/4 cup whole raw almonds
  • 2 Tbsp. neutral oil, divided
  • 1/2 white or yellow onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 tsp. kosher salt, divided
  • 8 oz. baby bella mushrooms, cleaned and trimmed
  • 2 1/2 oz. feta, crumbled
  • 1/2 cup panko
  • 3/4 tsp. smoked paprika
  • 1 large egg, lightly beaten
  • 1 Tbsp. mayonnaise
  • 1 canned chipotle chile in adobo, finely chopped
  • 2 tsp. adobo sauce
  • 1/2 cup mayonnaise, for drizzling on top
  • 1/8 tsp. kosher salt, to finish
  • 12 Tbsp. neutral oil, divided (if cooking in a pan)
  • 8 leaves butter lettuce
  • 8 buns, toasted
  • 8 large tomato slices
  • 8 thin slices red onion

Instructions

  1. Preheat oven to 350ยฐF. Spread black beans on a foil-lined baking sheet and roast until skins are cracked, about 20-25 minutes. Let cool for 5 minutes.
  2. Pulse roasted beans in a food processor until coarsely chopped and transfer to a bowl.
  3. Spread almonds on another baking sheet and roast until golden, about 8-10 minutes. Cool and pulse until finely chopped; add to bowl.
  4. Heat 1 Tbsp. oil in a skillet, add onion, garlic, and 1/2 tsp. salt. Sautรฉ until translucent, about 6-8 minutes. Add to bowl.
  5. Pulse mushrooms and cook in skillet until moisture evaporates, about 4-6 minutes, then add to bowl.
  6. Add feta, panko, smoked paprika, beaten egg, and mayonnaise to the bowl and mix until combined. Shape into 8 patties and refrigerate for at least 2 hours.
  7. Mix chipotle, adobo sauce, mayonnaise, and remaining salt in a bowl and refrigerate until serving.
  8. For grilling, preheat grill and cook patties for 4 minutes per side. For stovetop, heat 3 Tbsp. oil in skillet and cook patties for about 4 minutes per side.
  9. Serve on lettuce-lined buns topped with a veggie burger, tomato, and onion.

Notes

Customize with toppings like avocado or pickles. Can be frozen for up to 3 months.
