Preparation

  • Start by cracking the 2 large eggs into a mixing bowl. Add 1 tablespoon of milk, a pinch of salt, and a pinch of black pepper. Use a fork or whisk to blend until uniform and frothy.

Cooking

  • Preheat a nonstick skillet over medium-high heat. Pour in the egg mixture and scramble for about 1 minute until just set but still soft.
  • While the eggs cook, warm the tortillas in the microwave for 10-15 seconds or use a dry skillet until pliable.

Assembly

  • Remove the pan from heat and divide the scrambled eggs evenly between the tortillas. Sprinkle 1/4 cup of shredded cheddar cheese over the hot eggs.
