Instructions
 

Preparation

  • Begin by heating the coconut oil in a large pot or Dutch oven over medium heat.
  • Add the chopped onion, carrots, and celery to the pot. Cook until they soften, about 5 to 7 minutes.
  • Stir in the minced garlic, freshly grated ginger, curry powder, turmeric, cumin, and cayenne pepper (if using). Cook for an additional minute.
  • Add the rinsed red lentils and pour in the vegetable broth, bringing to a gentle boil.

Cooking

  • Reduce heat to low, cover the pot, and let it simmer for 20 to 25 minutes, stirring occasionally.
  • Pour in the full-fat coconut milk and stir well. Allow to simmer gently for another 5 minutes.

Finishing Touches

  • Remove the pot from heat and stir in the lime juice. Season with salt and black pepper.
  • Ladle into bowls and garnish with fresh cilantro if desired.

Notes

For variations, consider adding spinach or kale towards the end of cooking for added nutrition.
