Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • In a small mixing bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until smooth.
  • Arrange the cod fillets on the baking sheet and brush each with the glaze.

Cooking

  • Bake in the preheated oven for 12-15 minutes until the cod flakes easily with a fork.
  • Transfer the cod to serving plates, sprinkle with green onions, sesame seeds, and cilantro, and serve with lime wedges.

Notes

For extra flavor, marinate the cod in the glaze for 30 minutes before baking. Substitute ginger with ginger paste if needed. Add vegetables like bell peppers or broccoli to the baking sheet for roasting.
