  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooking oil (for skillet or baking) Use your choice of cooking oil

Preparation

  • Preheat your oven to 400°F (200°C) if you plan to bake the chicken.
  • In a mixing bowl, combine the mango juice, soy sauce, honey, minced garlic, and ginger. Whisk the mixture until well blended.
  • Season the chicken breasts with salt and pepper.

Cooking

  • For baking: Place chicken breasts on a baking sheet lined with parchment paper. Brush generously with glaze and bake for 25-30 minutes.
  • For skillet-searing: Heat a tablespoon of cooking oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, brushing with remaining glaze.

Serving

  • Serve hot with additional glaze drizzled on top if desired.

Notes

For extra flavor, marinate chicken in the mango glaze for at least an hour. Add vegetables like bell peppers during the last few minutes of cooking for added color and crunch.
