  • 4 large eggs (brought to room temperature 30 minutes before blending) Enriches the mixture for a fluffy consistency.
  • 90 g old fashioned rolled oats (1 cup, not quick oats) Adds heartiness and fiber.
  • 1 ripe banana the spottier the better Contributes moisture and sweetness.
  • 80 ml maple syrup (⅓ cup) Enhances sweetness and flavor.
  • 1 tsp baking soda Essential for achieving rise.
  • 150 g fresh blueberries (1 cup, frozen works too) Creates bursts of flavor.

Preparation

  • Preheat the oven to 350°F (180°C) and prepare four 2-cup oven-safe bowls. Spray them generously with non-stick cooking spray and place on a large baking sheet.
  • In a high-speed blender, combine the cottage cheese, eggs, oats, banana, maple syrup, and baking soda. Blend for 30 to 45 seconds until smooth, adding a splash of milk if necessary for pourable consistency.

Baking

  • Distribute the batter evenly among the prepared bowls, filling each about two-thirds full. Top with fresh blueberries, pressing some berries into the batter.
  • Bake for 35 to 40 minutes, checking at 35 minutes to prevent overbaking. Once golden brown and firm, remove from the oven and cool for at least 10 minutes.

Notes

For added flavor, consider a sprinkle of cinnamon or vanilla extract. Substitute half the blueberries with other fruits like raspberries or strawberries, or add protein powder for nutritional enhancement.
