Preparation

  • In a mixing bowl, combine the jerk seasoning, soy sauce, honey, olive oil, and lime juice.
  • Add minced garlic and chopped onion to the marinade.
  • Place the chicken thighs in the marinade, ensuring they are well-coated. Cover with plastic wrap and refrigerate for at least 15 minutes.
  • For best flavor, consider marinating overnight.

Cooking

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, arrange the marinated chicken pieces and pour any remaining marinade over.
  • Scatter the pineapple chunks around the chicken.
  • Cover the dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Broil the chicken for an additional 2-3 minutes for extra crispiness.

Serving

Notes
