Ingredients
  

Pasta and Base Ingredients

  • 400 g short pasta (fusilli or gemelli)
  • 2 large onions, thinly sliced
  • 2 tbsp balsamic vinegar
  • 200 g goat’s cheese, crumbled
  • 200 ml double cream
  • 100 g grated mozzarella
  • 50 g grated Parmesan
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • Fresh thyme (optional, for garnish)

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F).
  • Cook your chosen short pasta until it reaches al dente, then drain and set it aside.

Cooking Onions

  • In a large pan, heat the olive oil over medium heat. Add the sliced onions and cook until golden and soft, approximately 15-20 minutes.
  • Stir in the balsamic vinegar and let it bubble for an additional 5 minutes.

Combining Ingredients

  • In a bowl, combine the double cream, crumbled goat cheese, and season with salt and black pepper.
  • Mix the cooked pasta with caramelized onions and the cheese mixture in a large baking dish.
  • Sprinkle the mozzarella and Parmesan on top.

Baking

  • Bake for 20-25 minutes, or until the top is golden and bubbly.
  • Finish with fresh thyme leaves if desired before serving.

Notes

Use fresh herbs like thyme for better flavor. Feel free to mix in different cheeses or proteins such as chicken. Adjust balsamic vinegar to taste.
