Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking pan by greasing it well with butter or using parchment paper.
  • Mash the ripe bananas until smooth in a mixing bowl.
  • Incorporate sour cream and vanilla extract into the mashed bananas and mix until fully combined.
  • In a separate bowl, whisk together granulated sugar, cocoa powder, and eggs until light and fluffy.
  • Gently fold the banana mixture into the fluffy sugar mixture.
  • Sift in the flour and chopped walnuts, folding gently until just combined.
  • Pour the batter into the greased baking pan, smoothing the top with a spatula.

Baking

  • Bake for 25-30 minutes. Check with a toothpick for doneness.
  • Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before frosting.

Notes

Use overripe bananas for the best flavor and texture. You can add chocolate chips or different nuts based on your preference. For a gluten-free version, replace all-purpose flour with a gluten-free blend.
