  • 1/2 cup panko breadcrumbs Light and airy, for that perfect crispy texture.
  • 1/4 cup green onions, finely chopped Fresh and vibrant, bringing brightness to every bite.
  • 2 cloves garlic, minced Aromatic and earthy, enhancing the overall flavor.
  • 1 tablespoon ginger, grated Adds a zesty kick, balancing the sweetness of the other ingredients.
  • 1/4 cup soy sauce Salty and umami-rich, tying the flavors together beautifully.
  • 2 tablespoons brown sugar Sweetness that complements the savory notes perfectly.
  • 1 tablespoon sesame oil Rich and nutty, adding depth to the meatballs.
  • 1 teaspoon black pepper A hint of heat to spice things up.
  • 1 large egg Binds the ingredients, ensuring a cohesive meatball.
  • 1 tablespoon sesame seeds (optional) For a decorative crunch and nutty flavor.

For the Spicy Mayo Dip

  • 1/2 cup mayonnaise Creamy and smooth, providing a base for the dip.
  • 2 tablespoons Sriracha sauce Adds heat and a lovely tang.
  • 1 teaspoon lime juice Brightens the dip and adds acidity.
  • 1 teaspoon honey Balances the spiciness with a touch of sweetness.
  • Salt to taste Enhances all the flavors in the meatballs and dip.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C). This is essential for achieving a perfect, golden-brown finish on your meatballs.
  • In a large mixing bowl, combine ground beef, panko breadcrumbs, green onions, minced garlic, and grated ginger. The mixture will be the heart of your meatballs, so make sure to incorporate everything well.
  • Add soy sauce, brown sugar, sesame oil, black pepper, and egg to the mixture, then mix until just combined. Be careful not to overmix, as this can lead to tough meatballs.
  • Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper. This prevents sticking and makes for easy cleanup.
  • Bake for 20-25 minutes or until the meatballs are cooked through and nicely browned.

Making the Dip

  • In a small bowl, mix together mayonnaise, Sriracha, lime juice, honey, and salt to make the spicy mayo dip. This quick stir will create a creamy, spicy accompaniment for your meatballs.

Serving

  • Once the meatballs are done baking, serve them warm alongside the spicy mayo dip for dipping.

Notes

Try using different meats: Ground turkey or chicken can be used instead of beef for a lighter alternative. Add veggies for a nutrition boost: Finely chopped bell peppers or carrots can be added to the meatball mixture. Make them ahead: Prepare the meatballs and freeze them raw, then bake straight from the freezer when ready to cook — just add a few extra minutes to the baking time.
