Ingredients

  • 1 cup digestive biscuits, crushed for a buttery and crunchy base
  • ¼ cup melted unsalted butter to bind the crust together

For the pistachio layer

  • 1 cup pistachios, finely ground for a rich, nutty flavor
  • ¼ cup powdered sugar to sweeten the pistachio layer
  • ¼ cup heavy cream for a creamy texture

For the cream cheese layer

  • 1 cup softened cream cheese adds richness
  • ½ cup powdered sugar for creamy sweetness
  • 1 tsp vanilla extract for depth of flavor

For the blackberry topping

  • 2 cups fresh blackberries the star of the show!
  • ½ cup granulated sugar to sweeten the berry mixture
  • 1 tbsp fresh lemon juice adds brightness
  • 2 tsp cornstarch thickens the blackberry topping
  • ¼ cup pistachios, chopped for an added crunch on top
  • Extra blackberries for garnish to enhance visual appeal

Instructions
 

Preparation

  • Line an 8x8 inch pan with parchment paper, ensuring it hangs over the sides.
  • In a mixing bowl, combine the crushed digestive biscuits with the melted butter until fully coated. Press this mixture into the bottom of the lined pan, creating an even base.

Pistachio Layer

  • In a blender, blend the finely ground pistachios, powdered sugar, and heavy cream until smooth. Pour this mixture over the crust and spread it out evenly. Place the pan in the fridge to chill for 30 minutes.

Cream Cheese Layer

  • In a mixing bowl, beat the softened cream cheese with the remaining powdered sugar and vanilla extract until fluffy and smooth. Layer this cream cheese mixture over the chilled pistachio base evenly.

Blackberry Topping

  • In a saucepan over medium heat, combine the fresh blackberries with granulated sugar, lemon juice, and cornstarch. Cook until the mixture becomes thick and bubbly (about 5-7 minutes). Once thick, remove from heat and let it cool slightly.

Assembly

  • Spoon the cooked blackberry mixture over the cream cheese layer. Sprinkle the chopped pistachios on top.

Chill and Cut

  • Cover the pan with plastic wrap and chill for at least 4 hours, or until set. Once firm, lift the bars out of the pan using the parchment overhang, and cut into squares.
