  • 2-2.5 tablespoons Cajun seasoning (store-bought or homemade blend) Adjust based on spice preference.
  • 2 teaspoons high-heat oil (avocado, coconut, or ghee) For searing the salmon.

For the Sandwich Assembly

  • 4 pieces soft sandwich buns (sourdough or brioche recommended) For best flavor.
  • 60 ml Dilly Ranch or creamy herby hemp dressing, or store-bought ranch Can be homemade or store-bought.
  • 80 g mixed greens (lettuce, spinach, and sprouts) For freshness and color.
  • 1 small red onion, thinly sliced Adds crunch.
  • 0.5 pieces cucumber, thinly sliced For freshness.

For the Spice Mix

  • 2 teaspoons smoked paprika Adds depth of flavor.
  • 2 teaspoons garlic powder For a savory kick.
  • 2 teaspoons onion powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper Adjust according to taste.

Preparation

  • Let the salmon fillets rest at room temperature for about 20 minutes.
  • In a mixing bowl, combine the smoked paprika, garlic powder, onion powder, fine sea salt, oregano, thyme, black pepper, and cayenne to create a spice blend.

Cooking Salmon

  • Prepare your dressing (Dilly Ranch or creamy herby hemp).
  • Pat the salmon fillets dry, brush with olive oil, and coat generously with Cajun seasoning.
  • Heat a cast iron or carbon steel pan over medium-high heat with high-heat oil.
  • Sear salmon fillets skinless side down for about 4 minutes, flip, and cook for an additional 3-6 minutes until just cooked through.

Assembling the Sandwich

  • In a separate bowl, toss mixed greens with dressing.
  • Lightly toast the sandwich buns.
  • Layer the buns with a salmon fillet, cucumber, onion, and dressed greens. Serve immediately.
