  • 1 cup Greek Yogurt or Cream Cheese Use plant-based yogurt for a vegan version.
  • 2 tbsp Lemon Juice Freshly squeezed for best flavor.
  • 1 tsp Vanilla Extract Enhances overall taste.
  • 1 pinch Salt Balances the sweetness.

Instructions
 

Preparation of the Crust

  • Crush the graham crackers until they resemble fine crumbs.
  • Mix the cracker crumbs with melted butter until coated.
  • Press the mixture into the bottom of a pie dish to form a crust.

Create the Filling

  • In a mixing bowl, combine blueberries, sweetener, and lemon juice. If using fresh, mash some for texture.
  • In a separate bowl, mix together chia seeds, Greek yogurt (or cream cheese), vanilla extract, and salt.
  • Combine both mixtures until well blended.

Assemble the Pie

  • Pour the blueberry filling into the prepared crust, spreading evenly.
  • Cover and refrigerate for at least 2 hours to thicken.

Serve and Enjoy

  • Remove from the refrigerator, top with fresh blueberries, lemon zest, and mint leaves.
  • Cut into slices and serve chilled.

Notes
