Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Crack in the egg and add the vanilla extract and lemon zest, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gently combine the wet mixture with the dry mix, being cautious not to overmix.
  • Fold in the blueberries, lightly flouring them first to prevent bleeding.
  • Using a scoop, drop 1½ tablespoons of dough onto the prepared baking sheet.

Baking

  • Bake for 10–12 minutes, or until the edges turn golden and the centers remain soft.
  • Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack.

Notes

For best results, ensure your butter is at room temperature and avoid overmixing the dough. Lightly flour the blueberries before adding them to the mixture.
