  • Add chicken pieces, cumin, coriander, salt, and pepper; cook until chicken is lightly browned.
  • Pour in the coconut milk and bring to a simmer.
  • Cook for about 20-25 minutes, until chicken is cooked through.
  • Stir in lime juice and chopped cilantro before serving.

Notes

For enhanced flavor, marinate chicken in lime juice and spices for an hour before cooking. Adding vegetables like bell peppers or spinach during cooking adds color and nutrition. For a creamier texture, use full-fat coconut milk.
