Preparation

  • Place butter in a light-colored saucepan over medium heat, melting until golden brown specks emerge. Remove from heat and let cool slightly.
  • In a large bowl, whisk together brown sugar and granulated sugar. Drizzle in the slightly cooled brown butter and whisk until smooth.
  • Add each egg one by one, whisking well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually incorporate the dry ingredients into the wet ingredients, mixing on low or by hand just until combined.
  • Fold in chocolate chips until evenly distributed.
  • Cover the bowl with plastic wrap and chill dough in the refrigerator for at least 30 minutes or up to 24 hours.
  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • Using a cookie scoop, place rounded tablespoons of dough on the prepared sheets, leaving about 2 inches between cookies.
  • If desired, sprinkle tops with flaky sea salt.
  • Bake for 9-11 minutes until edges are golden brown and centers remain slightly soft.
  • Allow cookies to cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For a lighter version, use coconut or almond flour for gluten-free. For dairy-free, substitute butter with coconut oil. Consider using sugar alternatives for lower sugar content.
