  • 1 large egg Essential for binding the brownie mixture.

Caramel Layer

  • 14 oz unwrapped soft caramels Will melt into a smooth caramel topping.
  • 1 can (5 oz) evaporated milk Gives a silky texture to the caramel.

Cheesecake Layer

  • 16 oz cream cheese, room temperature The star of the cheesecake layer.
  • ½ cup granulated sugar Sweetens the cream cheese without overpowering.
  • 1 tsp pure vanilla extract Rounds out the flavors.
  • 2 large eggs Crucial for a creamy cheesecake.

Topping

  • 1 cup chocolate fudge sauce Adds an extra burst of chocolate flavor.

Instructions
 

Preparation of Brownie Base

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the brownie mix, one egg, and cold water until well incorporated, resulting in a thick and fudgy texture.
  • Press the mixture into a greased 9-inch springform pan.
  • Bake in the preheated oven for 25 minutes.

Preparation of Caramel

  • While the brownie base is baking, melt the caramels with the evaporated milk in a medium saucepan over low heat, stirring continuously until smooth.
  • Pour the warm caramel over the baked brownie layer once cooled slightly and let it sit for 15 minutes.

Preparation of Cheesecake Layer

  • In a mixing bowl, beat the room-temperature cream cheese until smooth.
  • Gradually add in the granulated sugar, vanilla extract, and two large eggs. Mix until creamy and well-blended.
  • Gently spread the cream cheese mixture over the caramel layer.

Baking the Cheesecake

  • Return the pan to the oven and bake for an additional 40 minutes, until the center barely jiggles.

Cooling and Serving

  • Remove the cheesecake from the oven and let it cool to room temperature.
  • Refrigerate for at least 4 hours (or overnight if possible).
  • Before serving, drizzle chocolate fudge sauce on top.
