  • 8 ounces pasta (curly, penne, or rotini) Choose your favorite pasta shape.
  • 1 cup pumpkin puree Rich and velvety.
  • 1 cup ricotta cheese Creamy and mild.
  • 1 cup shredded mozzarella cheese Gooey and melty.
  • ½ cup grated Parmesan cheese Salty and nutty.
  • 1 each egg, beaten Brings richness to the dish.

Seasoning Ingredients

  • 1 teaspoon garlic powder Gives depth of flavor.
  • 1 teaspoon onion powder Adds sweetness.
  • 1 teaspoon dried thyme or Italian seasoning For an herby touch.
  • to taste Salt and pepper Enhance the overall taste.

Additional Ingredients

  • ½ cup vegetable or chicken broth Adds moisture.
  • ½ cup fresh spinach (optional) For color and nutrition.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring water to a boil and cook your pasta according to package instructions until al dente. Drain and set aside.
  • In a large mixing bowl, combine the pumpkin puree, ricotta cheese, beaten egg, garlic powder, onion powder, and seasonings. Mix until smooth.
  • Stir in half of the shredded mozzarella and half of the grated Parmesan cheese into the pumpkin mixture.
  • Gently fold the cooked pasta into the pumpkin mixture until every piece is coated.

Baking

  • Grease a 9x13 inch baking dish generously. Pour in half of the pumpkin pasta mixture and spread it evenly.
  • If using spinach, layer it on top of the initial pasta mixture.
  • Add the remaining pumpkin pasta mixture on top and evenly distribute.
  • Sprinkle the remaining mozzarella and Parmesan cheese over the top.
  • Drizzle broth around the edges of the dish to keep the bake moist.
  • Bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
  • Allow the dish to cool for 15-20 minutes before serving.

Notes

For added flavor, consider roasting the pumpkin puree with spices before mixing. Experiment with different cheeses for variations. Prepare ahead and store in the fridge overnight for convenience. Incorporate nuts or breadcrumbs for crunch. Feel free to add seasonal vegetables.
