Instructions
 

Preparation

  • Combine yogurt, olive oil, cumin, coriander, paprika, turmeric, cinnamon, minced garlic, salt, and black pepper in a large bowl.
  • Add the chicken thighs, ensuring they are completely coated in the marinade. Cover and marinate for at least 20 minutes, or overnight if possible.
  • For the garlic sauce, whisk together mayonnaise, finely grated garlic, lemon juice, olive oil, and salt in a small bowl until smooth. Refrigerate to chill.

Cooking

  • Preheat a grill pan or skillet over medium-high heat. Cook the marinated chicken thighs for 4-5 minutes per side, or until cooked through.
  • Let the chicken rest for a few minutes before slicing thinly.

Assembly

  • Warm pita bread in the oven or on a skillet until soft.
  • Fill each piece of warmed pita with slices of chicken, shredded lettuce, tomato slices, and drizzle with garlic sauce.
