Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and cook until soft and translucent, about 4 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the sliced carrots and celery; cook for 5-7 minutes until the vegetables soften.

Cooking

  • Pour in the chicken broth and bring to a boil.
  • Add the shredded chicken, dried thyme, dried basil, salt, and pepper. Reduce heat and simmer for about 10 minutes.
  • Add tortellini to the soup and cook according to package instructions, about 7-9 minutes.
  • Stir in fresh spinach leaves and let wilt for about 1-2 minutes.

Serving

  • Remove from heat and stir in the chopped parsley.
  • Serve hot, garnished with grated Parmesan cheese.

Notes

Use rotisserie chicken for a quick option. Customize with your favorite vegetables. Add red pepper flakes for spice.
