Ingredients
  

Main Ingredients

  • 200 g good quality dark chocolate (70% cocoa solids or higher), chopped Chop chocolate for even melting.
  • 4 large eggs, separated Use fresh eggs for best results.
  • 1 pinch salt Enhances flavor of the chocolate.
  • 60 g granulated sugar, divided Split into two parts, 30g for yolks and 30g for whites.
  • 120 ml heavy cream, chilled Chill cream for better whipping.
  • 1 teaspoon vanilla extract Adds flavor to the mousse.
  • to taste Chocolate shavings or fresh berries for garnish Optional garnish.

Preparation

  • Prepare a double boiler: In a heatproof bowl, place chopped chocolate over a pot of simmering water. Stir gently until melted and smooth. Alternatively, melt in the microwave in 30-second intervals, stirring in between. Allow to cool slightly (5-10 minutes).
  • Whisk the egg yolks: In a bowl, whisk egg yolks with half the sugar (30g) until they turn pale yellow and thickened (about 2-3 minutes).
  • Combine: Slowly pour a small amount of cooled melted chocolate into the egg yolk mixture while whisking constantly. Gradually add the rest of the chocolate, whisking until smooth.

Beating and Folding

  • Beat egg whites: In a clean, dry bowl, beat egg whites with a pinch of salt on medium speed until soft peaks form. Add the remaining sugar (30g) slowly, continuing to beat until stiff, glossy peaks form.
  • Whip the cream: In another bowl, whip the chilled heavy cream with the vanilla extract until soft peaks form.
  • Fold together: Gently fold one-third of the whipped egg whites into the chocolate mixture. Then, gently fold in the remaining egg whites in two additions, ensuring a light, airy texture. Finally, fold in the whipped cream until everything is fully combined.

Chilling and Serving

  • Divide and chill: Spoon mousse into individual serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Garnish: When ready to serve, add chocolate shavings, fresh berries, or a dusting of cocoa powder to elevate your dessert further. Serve chilled and enjoy the bliss!

Notes

Chocolate mousse can be stored in the refrigerator for up to 3 days. For freezing, scoop portions into airtight containers and thaw in the fridge overnight before serving.
