Preparation

  • Check the Temperature: Use a candy thermometer to ensure the dark chocolate reaches a temperature between 88-90°F (31-32°C).
  • Add Vanilla: Stir in the vanilla extract to incorporate that extra layer of flavor.
  • Prepare the Baking Sheet: Line a 12x17 inch baking sheet with parchment paper or a silicone baking mat.
  • Chill the Chocolate: Pour the melted dark chocolate onto the prepared sheet, spreading it evenly into a thin layer, and chill in the refrigerator for about 20-30 minutes.

Layering

  • Melt the White Chocolate: In a clean heat-safe bowl, melt the finely chopped white chocolate using the same method.
  • Temperature Check Again: Ensure the white chocolate reaches a temperature of 86-88°F (30-31°C).
  • Add Peppermint Extract: Stir in the peppermint extract for that festive kick.
  • Combine Layers: Pour the melted white chocolate over the chilled dark chocolate layer.
  • Add Toppings: Immediately sprinkle the crushed peppermint candies evenly over the top.

Setting

  • Chill Again: Return the baking sheet to the refrigerator for at least 1-2 hours until the bark is completely firm and set.
  • Break It Up: Once firm, lift the parchment paper or silicone mat from the baking sheet and break into irregular pieces.
  • Store: Keep the peppermint bark in an airtight container in a cool, dry place.
