Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • Grease and line a round cake pan with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, spices, and salt until well combined.
  • In another bowl, cream the room-temperature butter and granulated sugar until fluffy, about three minutes.
  • Add the eggs one at a time, fully incorporating each before adding the next.
  • Gradually fold in the flour mixture and the mixed dried fruits, being careful not to overmix.
  • Pour the prepared batter into the lined pan, smoothing the top gently.

Baking

  • Bake the cake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the cake in the pan for a few minutes before transferring it to a wire rack.
  • Once cool, decorate with marzipan and royal icing.
